Taylor’s Pappy T’s gastropub offering a unique blend of craft cocktails and streamlined pub fare, officially opened its doors on May 9, 2023. Next door to the Country Store operates from noon to 11 p.m. daily and is already becoming a local favorite.
Terry Taylor hired Heather McClanahan to head up the opening. McClanahan alongside his children Emily Nichols and Casey Taylor.
Nichols stated that Pappy T’s, “aims to be more than just a bar.” Her operational expertise, having spent years working within her family’s business, gaining invaluable experience in various roles to the venture.
McClanahan, who holds a degree in accounting, with extensive experience bar tending and managing bars in Cave Junction, curates the impressive cocktail menu.

Casey Taylor handles maintenance and barbecue duties on Saturdays, adding a special touch to the weekend experience. The “Pappy T’s” name itself is a nod to Taylor and Nichols’s great-grandfather, a former racehorse owner, adding a touch of family history to the brand.
Pappy T’s was to create a space that felt more like a community hub than a traditional bar. “We wanted it to be family-friendly, not just a bar,” McClanahan explained. The gastropub concept has remained true to its roots, with occasional lively evenings that still maintain a welcoming vibe for families.
The menu boasts creative craft cocktails, including the popular Pappy T’s Margarita and a variety of blueberry-infused drinks like Mojitos, Margaritas, and Moscow Mules, all made with fresh-squeezed juices. Local Oregon beers are on tap, alongside a wide selection of bourbons and top-shelf liquors, local wines are available by the glass and bottle.
The food menu has evolved from a build-your-own concept to a streamlined selection of classy pub fare. Take and bake pizzas, with a $2 discount, and local desserts from Trillium Bakery like cookies and cupcakes add sweet touches to the menu. Pappy T’s offers a lively schedule of events and promotions, including Taco Tuesday with margarita specials and trivia night with Brittany. Football Specials on Sundays, Mondays, and Thursdays during the season. Happy Hour runs daily from 4 p.m, to 6 p.m. Take and bake pizzas.
Beyond the food and drinks, Pappy T’s offers a welcoming atmosphere. The popular fire pit creates an inviting space for outdoor seating, and the establishment emphasizes community engagement.
